Recipe: Almond Apricot Cookies
I was reading an article on Runner’s World about how the one failure of most runners when it comes to their diet is not getting enough “real food.” Yes, you read that right. Most people are so caught up in the world of energy bars and nutrient-enhanced drinks that they forget that their body needs actual food. You know, whole grains and vegetables and such.
This is nothing new, but it’s always nice to get a reminder of what a healthy diet looks like.
And on that note, I thought I would share my recipe for Almond Apricot Cookies with you. I posted it a few weeks ago on Foodie Underground, but given the recipe’s “natural energy bar” status, I figured it deserved a mention here. Especially since it has become a favorite post-run treat. (I like to call that strategy “run to eat”)
Yes, all you need is almonds, dried apricots, olive oil, honey and water. And some salt and ground cardamom if you’re in the mood.

With all this running lately, I have been craving anything loaded with protein. I can’t get enough of raw nuts and seeds. So it only made sense to make some brownies with them, right?
Recipe: Vegan Chocolate Mousse with Sea Salt
Sometimes you need a decadent recipe that you can make in less than twenty minutes. This one is it.
As we all know, there is no better combination than dark chocolate and sea salt. Made with avocados, the mousse is also vegan, but serve it to your non vegan friends and they’ll be so sold on the creamy chocolatey goodness that they’ll never notice the difference. You’ll get points for a posh dessert and no one will ever know that you made it in the frazzled half an hour that you had between your last work meeting and your dinner party.
Recipe: Summer Carrot and Date Quinoa Salad with Basil and Mustard Citrus Vinaigrette
The arrival of summer means the arrival of bags of mixed salad greens at farmers market, or of course, your own from your garden. Instead of basing salad recipes off of them though, I like to throw them in as an extra addition to whatever I am making, a complement to the rest of the dish. That’s exactly what they are in this quinoa salad recipe.

You could probably eat all of these in one sitting. I came up with these when I was in need of a super simple snack recipe that seemed fancy – which of course is sort of my cooking style in general. The result is easy and in my opinion, better (and healthier) than a bowl of popcorn.

Sometimes it’s worth going a little over the top with the healthy ingredients. Which is why when I was challenged to revamp a classic family recipe for banana bread I turned to avocado.
And of course it’s best consumed warm and topped with freshly made chocolate hazelnut spread.
