Recipe: Vegan Chocolate Mousse with Sea Salt

with 7 comments

Sometimes you need a decadent recipe that you can make in less than twenty minutes. This one is it.

As we all know, there is no better combination than dark chocolate and sea salt. Made with avocados, the mousse is also vegan, but serve it to your non vegan friends and they’ll be so sold on the creamy chocolatey goodness that they’ll never notice the difference. You’ll get points for a posh dessert and no one will ever know that you made it in the frazzled half an hour that you had between your last work meeting and your dinner party.

Recipe: Summer Carrot and Date Quinoa Salad with Basil and Mustard Citrus Vinaigrette

with 7 comments

The arrival of summer means the arrival of bags of mixed salad greens at farmers market, or of course, your own from your garden. Instead of basing salad recipes off of them though, I like to throw them in as an extra addition to whatever I am making, a complement to the rest of the dish. That’s exactly what they are in this quinoa salad recipe.

Recipe: Red Cabbage and Carrot Citrus Salad

This colorful salad is a springtime staple in my kitchen. Light and fresh, it takes only a few minutes to put together, and the sweeter taste of orange is a perfect offset to the raw cabbage. Today marks two years of writing my Foodie Underground column. How I have managed to produce a column every single Monday for 104 weeks is beyond me, but somehow it’s still going. Hence the celebratory post and birthday torte recipe. Enjoy!

Kale and Hazelnut Quinoa Cakes

leave a comment »

I have a minor obsession with quinoa, as is evidenced by the fact that I keep it on hand at all times and I even make cake with it. It’s delicious I swear.

Last week I was trying to come up with a falafel alternative, and a mixture of quinoa and white beans seemed like the way to go. Here’s the final result, one packed with protein and easy to make ahead of time and fry up right before eating. I also found that the bean and kale mixture is also excellent as a spread or dip. Enjoy!

Friday Photo: The Fix

An amazing cafe in Nevada City. A back patio surrounded by trees and filled with wrought iron chairs. A drink complete with bee pollen. A late winter afternoon spent sitting in sunshine.
